British asparagus is only in season from 23 April until 21 June, I adore British asparagus, so I always try and get it the moment it first becomes available. For just a short 8 –week period British asparagus season is in season, it’s brief but the quality is frequently exceptional.

Asparagus and pancetta soldiers with soft-boiled eggs

意大利培根卷芦笋配软煮嫩鸡蛋

小贴士:英文SOLDIER原意-士兵-,用在菜名上很有趣,一般是指-像形如士兵的枪一样长而硬的食物, 例如烤面包条、烤南瓜、芦笋、长西蓝花条、等等。不妨大家可以换换不同的“士兵”来做做菜。

Ingredients 食材
  • 230g bunch of asparagus - 230克新鲜芦笋扎
  • 2 thin slices of pancetta (about 90g) -2片薄意大利培根(大约90克)
  • 4 medium free-range eggs - 4只散养有机鸡蛋
  • a knob of butter - 黄油少许
 Method 制作方法
  1. Wrap each stalk of asparagus in the pancetta.
  2. Bring a medium saucepan of water to the boil, reduce to a simmer, then lower in 4 medium free-range eggs to cook for 5 minutes.
  3. Meanwhile, heat a knob of butter in a frying pan and fry the wrapped asparagus over a medium heat, turning frequently, for about 4 minutes or until the asparagus is just tender and the pancetta is golden.
  4. Remove the eggs from the water, then serve in egg cups with the asparagus to dip in as soldiers.

2.   将平底锅的水煮沸,然后把4只鸡蛋放进去煮5分钟。 3.   同时,在煎锅中加热黄油,在中等温度下煎炸包裹好的芦笋,翻转约4分钟,或直到芦笋嫩嫩,而培根变成黄为金色。 4.   从水中取出鸡蛋,放在漂亮的鸡蛋杯中,撒上盐和胡椒,然后可以把做好的培根芦笋沾在蛋里,即可享用。
