Just right after our traditional Chinese Festival, Mid-Autumn Festival, here comes to another traditional celebration in Western culture, Thanksgiving Day.

刚过完中国传统节日“中秋节”马上又迎来了加拿大的传统节日“感恩节”。

On this day, it is celebrated by gathering with loved ones and preparing the Thanksgiving Day meal, which usually includes turkey, mashed potatoes, stuffing, cranberry sauce and many other dishes.

在这一天,人们会与亲人们聚在一起,准备感恩节大餐。火鸡、土豆泥、各种填料和蔓越莓酱等等,都能在餐桌上看到。

While Thanksgiving is always a feast, it can get a little boring to have the same dishes year after year. On this Turkey Day, spice things up with some non-conventional Thanksgiving recipes that are sure to become a new tradition. Next, I will introduce a few healthy and delicious side dishes to our new Thanksgiving menu:

尽管能在感恩节大吃大喝,然而年年都是这几道菜,也不免会有些无趣。在这个“火鸡日”,一些有新意的感恩节食谱佳肴,一定能成为新风俗。以下我将介绍几道健康又美味的新的感恩节菜单:

1. Creamy Cheese Grits 芝士奶味麦粒

These luscious cheese grits can replace standard mashed potatoes as an alluring side dish.

这道美味的芝士麦粒,可以取代传统土豆泥作为配菜。

Ingredients:
  • 5 1/2 cups water
  • Salt
  • 1 1/2 cups stone-ground grits
  • 2 tablespoons unsalted butter
  • 1/3 cup freshly grated Parmigiano-Reggiano cheese
  • Freshly ground pepper
材料:
  • 5 1/2杯水
  • 1 1/2杯石磨麦粒
  • 2汤匙无盐黄油
  • 1/3杯现磨Parmigiano-Reggiano芝士
  • 现磨胡椒
Directions:
  1. In a medium saucepan, bring the water to a boil.
  2. Add a pinch of salt and gradually whisk in the grits.
  3. Cover and cook over low heat, whisking often, until the grits are thick and just tender, about 25 minutes.
  4. Stir in the butter and cheese, season with salt and pepper and serve.
做法:
  1. 取中等大小炖锅,将水烧开。
  2. 在麦粒里,一边加盐,一边搅拌。
  3. 盖上锅盖,用小火炖,并不时搅拌,直到麦粒粘稠变软,约25分钟。
  4. 加入黄油和芝士,并用盐和胡椒调味即可。

2. Spaghetti Squash 面条节瓜

Have a showstopping side ready in just 30 minutes with this festive spaghetti squash dish. With green lentils, tomatoes, and spinach in the mix, it’s full of so many goodies that your fellow diners may not even realize it’s actually free of gluten, grains, and dairy.

有了这道颇具节日气氛的面条节瓜,短短30分钟,就能准备好一道让客人赞不绝口的配菜。将绿扁豆、番茄、菠菜等蔬菜混合在一起,慢慢的营养,您的食客们可能还不知道这佳肴,还不含麸质、谷物和奶制品。

Ingredients:
  • 1 large Spaghetti Squash
  • 1 medium onion
  • 1 cup cherry tomatoes, halved
  • 1 can of green lentils (19 oz can), rinsed and drained (or previously cooked)
  • bunch of baby spinach or chopped spinach
  • 1 teaspoon celery seeds
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • sea salt and pepper to taste
  • fresh basil or thyme for plating
  • grape seed oil for cooking
材料:
  • 1大个面条节瓜
  • 1个中等大小的洋葱
  • 1杯小番茄,对半切开
  • 罐绿扁豆(19盎司)洗净沥干(或预煮好)
  • 一把小菠菜,或把菠菜切碎
  • 1茶匙芹菜籽
  • 1/2茶匙姜黄粉
  • 1/4茶匙辣椒粉
  • 海盐和胡椒适量
  • 鲜罗勒或百里香
  • 烹调用葡萄籽油
Directions:
  1. Preheat oven to 350F.
  2. Line a baking pan with parchment paper and drizzle with olive oil.
  3. Halve the Spaghetti Squash lengthwise and scoop out the seeds and strings from the center and place on a baking sheet cut side down and bake for 30 minutes.
  4. Remove from oven and let cool completely by basically setting aside and preparing the other ingredients.
  5. In a large skillet, drizzle in grape seed oil and sautee the onion, add in the cherry tomatoes and continue cooking uncovered for about 2 minutes until the tomatoes brown slightly.
  6. Stir in the lentils, spinach and seasoning: celery seeds, turmeric, cayenne pepper, salt and pepper.
  7. Reduce heat to low and cover the pan to allow the spinach to wilt and heat the lentils.
  8. Turn off heat and set aside.
  9. Back to the squash, fluff the ‘meat’ of the squash with a fork and scoop into the skillet.
  10. Stir to combine all the ingredients well. Adjust seasoning if needed.
  11. Scoop into the shells of the squash evenly.
  12. Top with chopped basil and serve hot.
做法:
  1. 烤箱预加热到350F。
  2. 在烤盘里垫上烤纸并淋上橄榄油。
  3. 将面条节瓜竖向对半切开,去籽,把中间的果肉切条,切面找下放在烤纸上,烤制30分钟。
  4. 从烤箱中取出,等到完全变凉。可以同时准备其他原料。
  5. 在大的煎锅里淋上葡萄籽油,煸炒洋葱,加入小番茄继续烧制约2分钟,打开盖子,直到番茄微微呈棕褐色。
  6. 加入小扁豆、菠菜和调味料:芹菜籽、姜黄、辣椒粉、盐和胡椒。
  7. 调成小火,盖上盖子,焖煮熟菠菜和豆子。
  8. 关火放在一边。
  9. 再用叉子将节瓜肉打成绒,舀到煎锅里。
  10. 充分把所有原料混合。酌情调味。
  11. 把混合物舀入节瓜里。
  12. 在上面撒上罗勒趁热食用。

3. Cornbread Sausage Stuffing Muffins 香肠馅玉米面包玛芬

These moist cornbread muffins are filled with stuffing ingredients like sausage, onions, celery and scallions, for a very flavorful muffin.

这款湿润的玉米面包玛芬,馅里有香肠、洋葱、芹菜和大葱,别具风味。

Ingredients:
For the cornbread muffins:
  • 1 cup all purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup corn flour
  • 1 tbsp baking powder
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1 cup buttermilk
  • 1 large egg
  • 1/3 cup vegetable oil
for the filling:
  • 1/2 -3/4 lb pork andouille sausage (finely chopped, browned, and cooked. I sliced my sausages into 1/2 inch thick slices and then divided each slice into quarters)
  • 1/4 cup finely diced celery (lightly sauteed so that they remain crunchy)
  • 1/4 cup finely diced onions (lightly sauteed)
  • 3 tbsp chopped green scallions
材料:
玉米面包玛芬:
  • 1杯通用面粉
  • 1/2杯玉米
  • 1/2 杯玉米面粉
  • 1茶匙泡打粉
  • 1/4杯粗糖
  • 1茶匙盐
  • 1杯酪奶
  • 1 大颗鸡蛋
  • 1/3 杯植物油
馅料:
  • 1/2 -3/4磅猪肉和ouille香肠(剁碎、烤熟),我将香肠切成1/2英寸厚片,再对切成四份。
  • 1/4杯切碎的芹菜(快炒保留爽脆的口感)
  • 1/4杯洋葱切丁(快炒)
  • 3汤匙绿葱切碎
Directions:
  1. Preheat oven to 375F. Line muffin tin with cupcake liners. In a large bowl, add all the cornbread ingredients and mix with a whisk until everything is blended. Scoop batter into cupcake liners, filling between 1/2 to 2/3 full. You should be able to make 12 muffins.
  2. In a separate bowl, add all the filling ingredients and mix together. Scoop a heaping 1 tbsp of stuffing into the middle of each muffin. Try to  make sure each one has an even amount of all the stuffing ingredients.
  3. Bake for about 20 minutes until muffins are done. Serve warm. Garnish with additional scallions if desired.
做法:
  1. 玛芬盘上垫上杯子蛋糕纸。在大碗里加入所有玉米面包原料,拿搅拌机搅打直到充分混合。将混合物填至玛芬盘1/2到2/3容量。可以做12个玛芬。
  2. 另取一个碗,加入所有馅心原料混合。在每个玛芬中间舀入一汤匙馅心。最好每个的馅量都差不多。
  3. 烤约20分钟,直到玛芬做好。趁热食用。可以依口味撒上葱花。

This holiday is about being "thankful for family, thankful for health, thankful for the harvest, thankful for freedom and diversity, and thankful for a beautiful country."

感恩节就是为了“感谢家人,健康、丰收、自由,也为有一个美好的国家而感恩。”
